Greek Lemon Potatoes
Greek style lemon, garlic and oregano foil roasted potatoes that are perfect from the grill.

- 1 1/2 pounds potatoes, scrubbed or peeled and cut into 1” cubes
- 2 tablespoons olive oil
- 1 lemon, zest and juice
- 3 cloves garlic, chopped
- 2 teaspoon oregano
- salt and pepper to taste
- Toss the potatoes in the mixture of the oil, lemon, garlic, oregano, salt and pepper and wrap in foil (or place on a grill pan if you have one).
- Roast over a medium-high grill or oven until tender, about 20-30 minutes.
Option: Replace the olive oil with lard, bacon grease or other meat drippings.
Option: Add lemon wedges to the package.
