Grilled Pork with Pear Salsa

 This is a great dish for your next get-together, you can prepare it the day before so all that’s left to do is grill your pork. The unique pear salsa gives this dish a fresh twist.

Ingredients

  • 1/4 cup lime juice
  • 2 Tbsp. olive oil
  • 2 garlic cloves, minced
  • 1-1/2 tsp. ground cumin
  • 1-1/2 tsp. dried oregano
  • 1/2 tsp. pepper
  • 2 lbs. pork tenderloin, cut into 3/4-inch slices
PEAR SALSA
  • 4 c. chopped peeled pears (about 4 medium)
  • 1/3 cup chopped red onion
  • 2 Tbsp. chopped fresh mint or 2 tsp. dried mint
  • 2 Tbsp. lime juice
  • 1 Tbsp. grated lime zest
  • 1 jalapeno pepper, seeded and chopped
  • 1 tsp. sugar
  • 1/2 tsp. pepper

Directions

  1. In a large bowl, combine the lime juice, oil, garlic, cumin, oregano and pepper; add pork. Turn to coat; cover and refrigerate overnight.
  2. Drain and discard marinade.
  3. Grill pork, uncovered, over medium heat for 4-6 minutes on each side or until juices run clear.
  4. In a bowl, combine the salsa ingredients. Serve with the pork.
