Herbed Butternut Squash

Butternut Squash is delicious pretty much anyway you cook it. That being said; don’t get stuck in a squash rut. Try grilling this veggie and you will be pleasantly surprised.
- 1 butternut squash
- 1 Tbsp. olive oil
- 1-1/2 tsp. dried oregano
- 1 tsp. dried thyme
- 1/2 tsp. salt
- 1/4 tsp. pepper
- Peel and cut squash crosswise into 1/2-in.-thick slices, remove and discard seeds.
- In a large bowl, toss squash with remaining ingredients.
- Oil your grill grate, you do not want your squash to stick.
- Grill, covered, over medium heat 6-8 minutes on each side or until tender.
