Butternut Squash is delicious pretty much anyway you cook it. That being said; don’t get stuck in a squash rut. Try grilling this veggie and you will be pleasantly surprised.


  • 1 butternut squash
  • 1 Tbsp. olive oil
  • 1-1/2 tsp. dried oregano
  • 1 tsp. dried thyme
  • 1/2 tsp. salt
  • 1/4 tsp. pepper


  1. Peel and cut squash crosswise into 1/2-in.-thick slices, remove and discard seeds.
  2. In a large bowl, toss squash with remaining ingredients.
  3. Oil your grill grate, you do not want your squash to stick.
  4. Grill, covered, over medium heat 6-8 minutes on each side or until tender.
