Red Onion Marmalade


  • 2 large red onions
  • ¼ c olive oil
  • 3 Tbsp. cider vinegar
  • 2 Tbsp. brown sugar or coconut palm sugar
  • 1 tsp. ginger
  • Salt


  1.  Thinly slice red onions.
  2. Cook in a skillet with olive oil over low heat, covered, until golden, 30 minutes.
  3. Stir in 3 tablespoons cider vinegar, 2 tablespoons brown sugar and 1 teaspoon grated peeled ginger; season with salt.
  4. Cook until thick, about 20 more minutes.
