Artichokes can be a little intimidating for those that are not familiar with this edible thistle. The edible portion of the plant consists of the flower buds before the flowers come into bloom. It's easy to make and enjoy.
Multiply this recipe for your family or crowd size.
Yields: 2 servings (1/2 an artichoke)
- 1 artichoke
- 2 cloves garlic, minced
- 2 Tbs. butter
- juice from half a lemon
- pinch of coarse salt
- Bring a large pot of salted water to a boil.
- Slice artichoke in half and immediately put it in the water. Boil 15 minutes.
- Melt the butter and add the garlic, lemon juice and salt and whisk together.
- Preheat grill to medium.
- Grill the artichokes on both sides, 15 minutes total, while basting with the butter sauce.
